Marco Rossi: Head Pizza Chef
With over 25 years of experience, Marco is the heart and soul of our pizza operation. Born in Naples, Italy – the birthplace of pizza – Marco grew up watching his grandfather make pizzas in their family restaurant. He brought those traditional techniques to Australia in 2005 and joined the Crust team in 2010.
"Pizza making is not just about following a recipe," Marco explains. "It's about understanding the dough, feeling how it responds to your touch, and knowing exactly when it's ready. Every day is different – humidity, temperature, even the flour batch can change how the dough behaves. A true pizza artisan knows how to adapt."
Marco is responsible for training all of our pizza makers across Australia, ensuring that the high standards and authentic techniques are maintained in every Crust location.
Amelia Chen: Innovation Chef
Amelia brings a fusion of culinary traditions to our team. With a background in both classical French cuisine and Chinese culinary arts, she approaches pizza creation with a unique perspective. After graduating from Le Cordon Bleu in Sydney, Amelia worked in several high-end restaurants before discovering her passion for pizza innovation.
"What I love about working with pizza is the endless canvas it provides," Amelia says. "There are traditional rules to respect, but there's also so much room for creativity and fusion. At Crust, I get to play with flavors from around the world while still honoring the foundations of great pizza making."
Amelia is the creative force behind many of our limited-edition specials and seasonal offerings. Her recent creation – the Lemongrass Prawn pizza with kaffir lime and coconut sauce – was awarded "Most Innovative Pizza" at the 2023 Australian Pizza Championships.
Liam O'Connor: Dough Specialist
If Marco is the heart of our operation, Liam is the scientist. With a background in food science and a passion for fermentation, Liam approaches dough-making with mathematical precision and a deep understanding of the biochemistry involved.
"People underestimate the complexity of pizza dough," Liam tells us. "We're talking about a living ecosystem of yeast and bacteria that create flavor compounds and affect texture. My job is to understand these processes and control them to create the perfect dough consistently, regardless of external factors."
Liam has implemented a rigorous quality control system for our dough production and is constantly experimenting with fermentation times and techniques to enhance flavor and digestibility.
Sarah Nguyen: Ingredient Sourcing Manager
Great pizza starts with great ingredients, and that's where Sarah comes in. With a background in sustainable agriculture and supply chain management, Sarah ensures that Crust uses only the finest quality ingredients while supporting local Australian producers whenever possible.
"My role involves building relationships with farmers and producers across Australia," Sarah explains. "We source our tomatoes from the Goulburn Valley, our cheeses from small dairy producers in Victoria, and much of our meat from family-run farms that prioritize ethical farming practices."
Sarah has been instrumental in increasing the percentage of locally-sourced ingredients at Crust from 65% to over 85% in just three years. Her work not only ensures the quality of our pizzas but also reduces our carbon footprint and supports the Australian agricultural community.
David Williams: Quality Assurance Chef
Every Crust pizza must meet exacting standards before it reaches our customers, and David is the guardian of those standards. With a background in both culinary arts and hospitality management, David oversees our quality control processes and training programs.
"Consistency is key in the food industry," David says. "Customers expect the same high-quality experience every time they order from Crust. My job is to ensure that whether you're ordering from Sydney, Melbourne, or Perth, your Crust pizza meets the same exacting standards."
David regularly visits Crust locations across Australia, conducting training workshops and quality audits. He's also responsible for developing and updating our comprehensive training programs for new team members.
